
Mixed Bean Soup
Recipe: Hearty Bean and Vegetable Soup
Ingredients:
- 1 cup Bean Soup Mix
- 8 cups vegetable broth or water
- 2 cloves garlic, minced (optional)
- 1 tbsp olive oil or butter
- 1 tsp cumin
- 1 tsp smoked paprika
- Salt and pepper to taste
- Fresh herbs (optional, for garnish)
Instructions:
1. Prepare the Bean Soup Mix:- Soak the bean soup mix overnight and cook until tender.
- In a large pot, heat the olive oil or butter over medium heat.
- Add the minced garlic and sauté until fragrant, about 1-2 minutes.
- Stir in the cooked beans, soaked vegetables, and cooked rice.
- Add the cumin, smoked paprika, salt, and pepper. Or add Curry powder.
- Bring the soup to a boil, then reduce heat and let it simmer for about 20-30 minutes to allow the flavors to meld together.
- Taste and adjust seasoning if necessary.
- Serve hot, garnished with fresh herbs if desired.
