Mixed Rice Pilaf

Recipe: Rice Medley with Dried Vegetables

Ingredients:

  • 1 cup rice medley (black, red, brown, and wild rice)
  • 1/2 cup white rice (optional)
  • 4 cups water or vegetable broth
  • 1 tbsp olive oil or butter (optional)
  • Salt and pepper to taste
  • Fresh herbs (optional, for garnish)

Instructions:

1. Rinse the Rice:
  • Rinse the rice medley and white rice under cold water until the water runs clear.
2. Soak the Dried Vegetables:
  • Place the dried vegetables in a bowl and cover with hot water. Let them soak for about 10 minutes, then drain.
3. Cook the Rice:
  • In a large pot, bring the 4 cups of water or vegetable broth to a boil.
  • Add the rice medley, white rice, and a pinch of salt.
  • Reduce heat to low, cover, and simmer for 30-40 minutes, or until the rice is tender and the liquid is absorbed.
4. Combine Ingredients:
  • Once the rice is cooked, add the rehydrated vegetables to the pot.
  • Stir in olive oil or butter, if using, and season with salt and pepper to taste.
5. Serve:
  • Fluff the rice with a fork and serve hot.
  • Garnish with fresh herbs if desired.
