Mixed Rice Pilaf
Recipe: Rice Medley with Dried Vegetables
Ingredients:
- 1 cup rice medley (black, red, brown, and wild rice)
- 1/2 cup white rice (optional)
- 4 cups water or vegetable broth
- 1 tbsp olive oil or butter (optional)
- Salt and pepper to taste
- Fresh herbs (optional, for garnish)
Instructions:
1. Rinse the Rice:- Rinse the rice medley and white rice under cold water until the water runs clear.
- Place the dried vegetables in a bowl and cover with hot water. Let them soak for about 10 minutes, then drain.
- In a large pot, bring the 4 cups of water or vegetable broth to a boil.
- Add the rice medley, white rice, and a pinch of salt.
- Reduce heat to low, cover, and simmer for 30-40 minutes, or until the rice is tender and the liquid is absorbed.
- Once the rice is cooked, add the rehydrated vegetables to the pot.
- Stir in olive oil or butter, if using, and season with salt and pepper to taste.
- Fluff the rice with a fork and serve hot.
- Garnish with fresh herbs if desired.
