Mixed Bean Soup

Recipe: Hearty Bean and Vegetable Soup

Ingredients:

  • 1 cup Bean Soup Mix
  • 8 cups vegetable broth or water
  • 2 cloves garlic, minced (optional)
  • 1 tbsp olive oil or butter
  • 1 tsp cumin
  • 1 tsp smoked paprika
  • Salt and pepper to taste
  • Fresh herbs (optional, for garnish)

Instructions:

1. Prepare the Bean Soup Mix:
  • Soak the bean soup mix overnight and cook until tender.
2. Sauté Aromatics: (if using)
  • In a large pot, heat the olive oil or butter over medium heat.
  • Add the minced garlic and sauté until fragrant, about 1-2 minutes.
3. Combine Ingredients:
  • Stir in the cooked beans, soaked vegetables, and cooked rice.
  • Add the cumin, smoked paprika, salt, and pepper. Or add Curry powder.
4. Simmer the Soup:
  • Bring the soup to a boil, then reduce heat and let it simmer for about 20-30 minutes to allow the flavors to meld together.
5. Serve:
  • Taste and adjust seasoning if necessary.
  • Serve hot, garnished with fresh herbs if desired.
